2017 Cabernet Sauvignon - Bottle

Insieme Wines 2017 Cabernet Sauvignon is a full-bodied wine.  It was aged 24 in French Oak barrels and afterwards in neutral tank for an approximate 50% new oak equivalent.  It has a deep Ruby Red color that is concentrated.  The bouquet opens with aromas of dark berries and stewed plums.  The modest regimen of oak adds the slightest hint of smoke and spice.  The mouthfeel is dry, medium+ viscosity with plenty of velvety soft tannins.  The palate opens to a mouthful of plums, rhubarb and dark chocolate.  With a little time, it picks up hints of violets, cedar, toffee with hints of licorice.  The finish is dry, full of character with a lasting balance of fruit, light oak and herbal undertones.  The light regimen of oak showcases the beautiful fruit characteristics of Cabernet Sauvignon while allowing it to be very approachable.
