100% (Koch Ranch) Cabernet Sauvignon

Insieme Wines 2017 Reserve Cabernet Sauvignon was aged for 22 months in new French Oak Barrels and for 36 additional months in neutral tanks.  In contrast to the 2016; the selection of 100% French Oak gives this vintage a more delicate and an almost feminine profile.  The wine delivers a wonderful balance of fruit and herbs as it aerates and opens up.  This wine is unfined and unfiltered to preserve maximum phenolic composition.  It has a dark Garnet color with a purple hue.  It is deep and concentrated.  The bouquet is highly perfumed.  It opens with aromas of Blueberry, Vanilla, fresh Sage and river stone.  As it opens it delivers a beautiful medley of dark fruit, almond, thyme and Brulee. The mouthfeel is dry, medium+ viscosity with ample but smooth tannins and enough bright acidity to carry the volume.  The palate opens to layers of ripe red fruit, raspberry, dark cherry, mulberry and black pepper.  With a little time, it opens to layers of lavender, mocha, rhubarb, prunes, leather, herbs with hints of spice and truffle all while carrying the underlying fruit.  The lengthy time in oak finishes with hints of caramel, pine and vanilla.  This wine will age for years to come in your cellar.  It has tons to offer... decant and enjoy!
